A&T Food Science Student Earns National First PlaceFor Immediate Release Greensboro, NC: A food science student from the Department of Human Environmental and Family Sciences at North Carolina Agricultural and Technical State University took top honors in a national contest, and another finished in the top five. Carlyn Ray, a summer graduate from Chicago, won first place in the Product Development Division Poster Competition, and Crystal Pass, a senior from Greensboro, won fourth place in the Undergraduate Research Paper Competition at the Institute of Food Technologists Annual Meeting. Both won $300 for their entries. The Institute of Food Technologists Annual Meeting, held in New Orleans, attracted nearly 20,000 people from universities, agencies and companies throughout the country. More than 1500 papers were presented during the meeting. Rays poster was entitled, Meat Analogs from Peanut and Their Use as Meat Substitutes in Ethnic Snacks, with Pass presented Physical, Chemical and Sensory Characteristics of Low-Fat Table Spreads. Following her award, Ray received a Carver Fellowship to complete Ph.D. in Food Science at Iowa State University. -
